Ingredients
1 tbsp coconut oil
2 onions, thinly sliced
10 g (2 tsp) garlic, pressed
10 g (2 tsp) ginger, pressed
200 g (8 oz) red lentils, rinsed
500 ml (2 cups) vegetable stock
1 tsp cumin
1 tsp chilli powder
1 tsp garam masala
400 g (14 oz) chopped tomatoes
400 ml (14 fl oz) light coconut milk
Method
- To make the lentil curry, heat the coconut oil in a large pan on medium heat and add the onions and cook for around 10 minutes until softened.

Add the garlic and ginger and cook for further 2 minutes. -
Add all of the remaining ingredients and mix through. -
Reduce the heat to low, cover and simmer for 30 minutes stirring occasionally. -
Remove the lid and simmer for a final 15 minutes.
