Ingredients
400 g (3 cups) sweet potatoes
20 g (4 tbsp) oats
2 scoops of chocolate whey protein powder
1 egg
2 tbsp honey
1 tsp baking powder
1 tsp coconut oil
2 tbsp chopped nuts
3 tbsp cocoa powder
Method
- To make the sweet potato brownies, you'll first need to preheat an oven to 180ºC (360℉).

Peel and chop the sweet potatoes and boil in a pan of water for around 15 minutes before draining them. Tip the cooked sweet potato on a plate so it can begin to cool. -
In a food processor add the raw oats and quickly blitz so they resemble flour. -
Add the protein powder, egg, honey, baking powder, coconut oil and chopped nuts to the food processor and give it a quick blitz. -
Add the sweet potato (it doesn't need to be completely cold, just not piping hot) to the food processor and mix everything through. -
Grease a baking tray and pour the mixture onto it then pop it into the oven for around 30 Minutes. -
Allow cooling completely before removing from the baking tray and slicing into 8 pieces.
