Ingredients

1/4 courgette, thinly sliced in half moons

1/2 red pepper, in slices

5 broccoli florets, thinly sliced

1 tsp. olive oil (or cooking spray)

Salt and pepper

4 mini wholemeal tortillas

4 slices low-fat cheddar


Method

  1. To make the vegetarian quesadillas, in a bowl, combine courgette, red pepper, broccoli florets, olive oil, salt and pepper. Toss to coat the veggies.

  2. Heat a griddle pan to high and layer the veggies in a single layer, cook for a few minutes per side, or until tender and with grill marks. Set the veggies aside once done.

  3. In the same pan, place two whole meal tortillas and layer ΒΌ of the cooked veggies over each half, top with one cheese slice and let it melt.

  4. Fold the tortillas over the cheese and flip them, cook them until the cheese has melted. Repeat with the rest of the tortillas and cut them in big triangles.
