Ingredients
1/4 courgette, thinly sliced in half moons
1/2 red pepper, in slices
5 broccoli florets, thinly sliced
1 tsp. olive oil (or cooking spray)
Salt and pepper
4 mini wholemeal tortillas
4 slices low-fat cheddar
Method
- To make the vegetarian quesadillas, in a bowl, combine courgette, red pepper, broccoli florets, olive oil, salt and pepper. Toss to coat the veggies.

Heat a griddle pan to high and layer the veggies in a single layer, cook for a few minutes per side, or until tender and with grill marks. Set the veggies aside once done. -
In the same pan, place two whole meal tortillas and layer ΒΌ of the cooked veggies over each half, top with one cheese slice and let it melt. -
Fold the tortillas over the cheese and flip them, cook them until the cheese has melted. Repeat with the rest of the tortillas and cut them in big triangles.
