Ingredients

1 tbsp. olive oil

1 lemon, juiced

½ tsp. red pepper flakes (optional)

Salt and pepper

180 g (6 oz) pre-prepared quinoa

120 g (4 oz) feta cheese, in cubes

2 tomatoes, cubed

¼ red pepper, cubed

½ cucumber, cubed

½ red onion, thinly sliced

20 g (1 tbsp) green olives

20 g (1 tbsp) Kalamata olives

Handful of fresh parsley, chopped


Method

  1. To make the quinoa salad with feta, in a small bowl, combine olive oil, lemon juice, red pepper flakes, salt and pepper.

  2. In a big bowl, combine quinoa, feta cheese, tomatoes, red bell pepper, cucumber, red onion, green olives and kalamata.

  3. Pour over the dressing and add some chopped parsley.
