Ingredients

30 g (1/8 cup) butter

450g (1 lb) chicken breast, cubed

1 onion, finely chopped 

800 ml (27 fl oz) chicken stock

120 g (4 oz) fresh mushrooms, sliced

1 stick celery, finely chopped 

1 carrot, finely chopped

1 tsp mixed herbs

1/4 tsp garlic powder

250 g (9 oz) wild rice mix, cooked

Fresh thyme


Method


  1. In a large pan, melt the butter and fry the chicken and onion for a few minutes to give them some colour.

  2. In the same pan add all the other ingredients except the rice.

  3. Bring to a boil, reduce the heat, cover and simmer for 30 min.

  4. Add rice and stir through.

  5. Garnish with fresh thyme.
