Ingredients

2 onions, chopped

2 garlic cloves, chopped

2 carrots, chopped

2 green peppers, chopped

200 g (8 oz) chorizo sausage, chopped

1 tsp curry powder

1 tsp chilli powder

800 g (1.5 lbs) sweet potato. chopped

2 L (4 cups) stock

salt and freshly ground black pepper


Method


  1. Heat a large, soup pan on a low heat and add the onions, carrots, peppers and chorizo and gently fry for about 10 minutes. The chorizo should release enough oil for frying, if not, add a touch of oil.

  2. Add the garlic and fry for a further 30 seconds.

  3. Then add the curry powder, chilli powder, sweet potato, stock and salt and pepper, cover and simmer for 15 minutes.

  4. Blend everything then serve. Delicious!
