Ingredients
1 tbsp olive oil
1 red onion, chopped
4 garlic cloves, chopped
1 green pepper, chopped
1 large carrot, chopped
150 g (5 oz) mushrooms, chopped
4 slices of prosciutto, fat removed
500 g (1 lb) chicken breast
150 ml (5 fl oz) wine, red or white (use more stock if you don't want to use wine)
400 g (14 oz) chopped tomatoes
400 ml (14 fl oz) chicken stock
1 tbsp mixed herbs
Pinch of salt and pepper
40 g (2 tbsp) olives
Method
- Heat the olive oil in a large pan over medium heat and add the onions, garlic, green pepper, carrot, mushrooms and prosciutto and gently fry for around 5 minutes.

Add the chicken breasts and cook for a few minutes on each side until browned. -
Add the wine and simmer for a few minutes until it's reduced by around a third. -
Add the chopped tomatoes, stock, mixed herbs, salt and pepper. Cover, reduce the heat to low and simmer for 30 minutes. -
Remove the lid and add the olives. Simmer uncovered for a final 10 minutes. -
Serve.
