Ingredients
400 g (14 oz) mashed potatoes
50 g (2 oz) Parmesan cheese, grated
50 g (2 oz) lighter cheddar cheese, grated
20 g (1 oz) shallots, finely chopped
2 tsp. mixed herbs
1/2 tsp. salt
1/4 tsp. pepper
350 g (12 oz) turkey leftovers, finely chopped
1 large egg
100 g (4 oz) panko bread crumbs
Cooking spray
Yogurt Sauce:
200 g (¾ cup) yogurt
1 tbsp. lemon juice
1 tsp. dill
1/2 tsp. garlic, minced
Sour cream, optional
Method
Preheat the air fryer to 200°C (390°F).
In a large bowl, combine mashed potatoes, cheeses, shallots, herbs, salt and pepper; stir in turkey. Mix lightly but thoroughly. Shape into twenty croquettes.
In a shallow bowl, whisk the egg.
Place bread crumbs in another shallow bowl. Dip croquettes in egg mixture, then in bread crumbs, patting to help the coating adhere.
Working in batches, place croquettes in a single layer in the air fryer basket (you can add some non-stick spray), they shouldn’t be on top of each other. Cook until golden brown, for about 4-5 minutes. Turn and add a bit more non-stick spray, and cook until golden brown; 4-5 minutes.
Whilst cooking, mix the ingredients for the yoghurt sauce in a bowl and set aside.
Once the croquettes are done, serve with yoghurt sauce.
