Ingredients

600 g (1.5 lbs) chicken thigh fillets

Salt and pepper

1 tbsp. olive oil

2 garlic cloves, minced

3 shallots (or 1 red onion), finely chopped 

30 ml (1 fl oz) balsamic Vinegar

30 ml (1 fl oz) honey

Method

Heat a frying pan to medium.

Season the chicken thighs with salt and pepper.

Add the olive oil to the pan and add the chicken thighs. Cook them on both sides until browned and cooked through. Around 12-15 minutes.

Push them to one side of the pan, lower the temperature and add the garlic and shallots. Cook for a couple of minutes, or until fragrant.

Add the balsamic vinegar and honey and mix everything well, making sure everything is well combined.

Serve with your favourite carbs and veggies.
