Ingredients

50 g (2 oz) butter

8 cloves

8 green cardamom pods

½ tsp fennel seeds

500 g (1 lb) onions, thinly sliced

40 g (2 tbsp) garlic

40 g (2 tbsp) ginger

1 kg (2 lbs) chicken breast, chopped

1 tsp cinnamon

1 tbsp coriander

2 tsp cumin 

½ tsp chilli powder

1 tsp ground turmeric 

400 g (14 oz) chopped tomatoes

2 bay leaves

600 ml (2 1/2 cups) chicken stock

400 g (14 oz) basmati rice


Method


  1. Preheat oven to 180°C (360℉).

  2. Heat the butter in a large, oven proof pan on a low heat and add the cloves, cardamom and fennel seeds. Gently fry for around a minute then add the onions.

  3. Slowly cook the onions for 10 to 15 minutes until they start to caramelise then add the ginger, garlic and chicken and cook until the chicken is lightly coloured.

  4. Add the coriander, cumin, chilli powder, turmeric, cinnamon, chopped tomatoes, bay leaves and stock and bring to the boil.

  5. Add the rice, mix through, cover with a tight fitting lid then place into the oven for 40 minutes minutes until the chicken is cooked and the rice is tender.

  6. Serve.
