Ingredients

1 tsp olive oil

75 g (3 oz) chorizo, diced

1 onion, finely chopped

500 g (1 lb) chicken breast, chopped

20g (4 tsp) garlic, finely chopped

1 tsp turmeric

1 tsp smoked paprika

200 g (8 oz) paella rice (uncooked weight)

750 ml (3 cups) chicken stock (just use one stock cube)

100 g (4 oz) cooked king prawns

Juice of 1/2 a lemon

100 g (4 oz) spinach


Method


  1. Heat the oil in large pan on a medium to high heat.

  2. Add the chorizo and onion and cook for about 5 minutes until the onion is turning brown and the chorizo is releasing delicious oil.

  3. Add the chicken breast and fry for a few more minutes to add some colour to the chicken. It doesn't need to be fully cooked through at this stage.

  4. Add the turmeric, smoked paprika and garlic and fry for a further 30 seconds.

  5. Tip in the uncooked paella rice and stir through so it's coated in the oil and flavours.

  6. Add the stock and simmer for 15 minutes, uncovered, and stir often so the rice doesn't stick to the bottom of the pan.

  7. Add the prawns, a squeeze of lemon, the spinach and simmer for 5 minutes more.

  8. Serve and enjoy!
