Ingredients

1 tbsp olive oil

2 onions, sliced 

2 apples, sliced 

1 tsp. dried thyme 

1 tsp. dried rosemary 

1⁄2 tsp. black pepper

1 tbsp. corn flour 

1 kg (2 lbs) pork loin 

1 tbsp. honey 

3/4 tsp salt

200 ml (7 fl oz) beer


Method


  1. Heat the olive oil in a large frying pan on medium heat and gently fry the onions and apples until they start to turn golden brown.

  2. Add the beer to the pan and cook for about a minute to burn off some of the alcohol.

  3. Tip everything from the pan into the slow cooker along with all of the remaining ingredients.

  4. Cover with a lid and simmer for 7 hours on low.

  5. Once ready, remove the pork from the slow cooker and shred it with two forks before returning to the dish with the juices, apples and onions. 

  6. Mix everything through then serve.
