Ingredients
1 tbsp olive oil
2 onions, sliced
2 apples, sliced
1 tsp. dried thyme
1 tsp. dried rosemary
1⁄2 tsp. black pepper
1 tbsp. corn flour
1 kg (2 lbs) pork loin
1 tbsp. honey
3/4 tsp salt
200 ml (7 fl oz) beer
Method
- Heat the olive oil in a large frying pan on medium heat and gently fry the onions and apples until they start to turn golden brown.

Add the beer to the pan and cook for about a minute to burn off some of the alcohol. -
Tip everything from the pan into the slow cooker along with all of the remaining ingredients. -
Cover with a lid and simmer for 7 hours on low. -
Once ready, remove the pork from the slow cooker and shred it with two forks before returning to the dish with the juices, apples and onions. -
Mix everything through then serve.
