Ingredients
1 tsp olive oil
700g (1.5 lbs) chicken sausages
1 large onion, chopped
15g garlic, minced
2 carrots, peeled and sliced into rounds
25g corn flour
1/2 can (7 oz) chopped tomatoes
350 ml (12 fl oz) chicken stock, made with 1 stock cube
1 tbsp. Worcestershire sauce
1 tbsp. tomato puree
1 tsp mixed herbs
Fresh parsley, chopped (for garnish)
Method
Pre-cook the sausages: Start by browning the chicken sausages in a frying pan over medium-high heat. You're not trying to cook them through, just get a nice colour on them. Once browned, place the sausages in your slow cooker.
In the same pan, add a little more oil if necessary, then add the chopped onion.Sauté until the onions become translucent, then add the garlic and cook for 30 seconds more. Add this to the slow cooker.
Now add the carrots, corn flour, chopped tomatoes, stock, Worcestershire sauce, tomato puree and mixed herbs to the slow cooker.
Stir everything to combine and make sure the sausages are submerged in the liqud.
Cover the slow cooker and cook on low for 6-7 hours or on medium for 4-5 hours.
Sprinkle with chopped fresh parsley and serve with warm crusty bread or mashed potatoes for a comforting meal.
