1 green chilli, finely chopped
5 g (1 tsp) ginger, mashed
5 g (1 tsp) garlic, mashed
1 tbsp fish sauce
1 tbsp soy sauce
100 ml (4 fl oz) water
1 tsp honey
A handful, fresh basil leaves
Method
- To make this thai pork mince recipe, on a high heat, add 1 tsp of coconut oil to a wok and add the pork mince. You want to cook this for about 8-10 minutes until it really starts to brown and take on a delicious flavour.
-
Remove the pork from the wok once cooked and then return to the wok to the stove and reduce to a medium heat. Add the remaining 1 tsp coconut oil along with the red pepper and spring onions. Fry for a minute or so until they start to soften. -
Add the chilli, ginger and garlic and fry for a further 30 seconds. Put back the mince to the pan. -
Add the fish sauce, soy sauce, water and honey and simmer for a couple of minutes. -
Add the basil, mix it through until it wilts then serve.
