Ingredients

2 tsp coconut oil

500 g (1 lb) 5% fat pork mince

1 red pepper, finely chopped

4 spring onions, finely chopped

1 green chilli, finely chopped

5 g (1 tsp) ginger, mashed

5 g (1 tsp) garlic, mashed

1 tbsp fish sauce

1 tbsp soy sauce

100 ml (4 fl oz) water

1 tsp honey

A handful, fresh basil leaves


Method


  1. To make this thai pork mince recipe, on a high heat, add 1 tsp of coconut oil to a wok and add the pork mince. You want to cook this for about 8-10 minutes until it really starts to brown and take on a delicious flavour.

  2. Remove the pork from the wok once cooked and then return to the wok to the stove and reduce to a medium heat. Add the remaining 1 tsp coconut oil along with the red pepper and spring onions. Fry for a minute or so until they start to soften.

  3. Add the chilli, ginger and garlic and fry for a further 30 seconds. Put back the mince to the pan.

  4. Add the fish sauce, soy sauce, water and honey and simmer for a couple of minutes.

  5. Add the basil, mix it through until it wilts then serve.
