Ingredients
400 g (14 oz) tinned tuna (drained weight), about 3x 200g (7 oz) cans
50ml (2 fl oz) Greek yoghurt
80 g (3 oz) Panko breadcrumbs
2 large eggs
1spring onion sliced
1/2 red pepper finely diced
1/2 carrot, grated
50 g (2 oz) Thai green curry paste
fresh parsley
juice of half a lemon
Salt and pepper to taste
Method
Combine the tinned tuna, Greek yoghurt, Panko breadcrumbs, eggs, spring onion, red peppers, carrots, curry paste, fresh parsley and lemon juice in a bowl and season with salt and pepper. Mix together rand shape into about 8 patties.
Place in the basket or tray of your air fryer. Cook at 180ºC (360ºF) for 15-20 minutes or until golden brown. Turn once half way through.
