Ingredients
50 g (2 oz) butter
8 cloves
8 green cardamom pods
½ tsp fennel seeds
500 g (1 lb) onions, thinly sliced
40 g (2 tbsp) garlic
40 g (2 tbsp) ginger
1 kg (2 lbs) chicken breast, chopped
1 tsp cinnamon
1 tbsp coriander
2 tsp cumin
½ tsp chilli powder
1 tsp ground turmeric
400 g (14 oz) chopped tomatoes
2 bay leaves
600 ml (2 1/2 cups) chicken stock
400 g (14 oz) basmati rice
Method
- Preheat oven to 180°C (360℉).

Heat the butter in a large, oven proof pan on a low heat and add the cloves, cardamom and fennel seeds. Gently fry for around a minute then add the onions. -
Slowly cook the onions for 10 to 15 minutes until they start to caramelise then add the ginger, garlic and chicken and cook until the chicken is lightly coloured. -
Add the coriander, cumin, chilli powder, turmeric, cinnamon, chopped tomatoes, bay leaves and stock and bring to the boil. -
Add the rice, mix through, cover with a tight fitting lid then place into the oven for 40 minutes minutes until the chicken is cooked and the rice is tender. -
Serve.
